Pasta Con Broccoli Recipe

Hello all!

I haven’t posted a recipe in a long time, and I’ve been meaning to. The other night I made Pasta Con Broccoli for the second time. It was even more delicious than the first time! I found the recipe online and I haven’t been more happy with a recipe than I am with this one. It tastes just like Pasta House’s in my opinion!

(I’m sorry my food pictures aren’t the BEST, but in time I do plan to get better with it. The lighting, and not having my own place completely throws me off, so sorry in advance!)

What you will need:

  • 1 lb box uncooked large shell pasta
  • 2 cups cream (heavy or whatever you find in the store)
  • 2-4 tbsps of butter ( I used 4)
  • 2 tsps minced garlic
  • 1 8 oz. can tomato sauce
  • 1 head of broccoli, chopped
  • 8 oz. sliced fresh button mushrooms
  • salt and pepper
  • fresh grated parmesan cheese ( I used shredded parm cheese)

 

Basically, you cook the pasta until it’s halfway done. I cooked mine for 6 minutes then drained it and put it back into the pot. Add the cream, butter, garlic, tomato sauce, broccoli, salt and pepper. Bring that to a hard boil.

When the noodles are fully cooked and the sauce starts to thicken up, add the mushrooms and stir to combine.

Remove it from the heat, and add the cheese. Toss and serve. VOILA, and amazingly delicious meal!

I would eat this every single day… If I wanted to gain weight. 😛 I’m trying to be good and get healthier so when I make this it will be on a cheat day, and like a luxury to me. Lol.

Goals for 2016**

I don’t want to say these are “resolutions”, but more like goals that I’d like to keep this year. I have several, and I’m hoping to get started soon. ASAP. Stat! Pronto! Haha! Here is my list of things to do in 2016:

1.) Start up Enbrel again. My shot for psoriasis. I have suffered from psoriasis for about 15 years. It’s awful – if you have it or know someone that does, you might know how awful it can be. I wish they would find a cure for it.

2.) Finally start that 30 day fitness challenge. The only reason I haven’t started yet is because last week I wasn’t feeling well, and I also thought I was getting a bladder infection. And these last several days I have suffered from really bad headaches — so as soon as I’m feeling myself I am going to begin that!

3.) Keep a good skin care routine. I have a bunch of skincare products, but I need to actually keep up with a good skincare regimen. Daily. Morning and night!

4.) Practice more with my makeup. I want to get really good with makeup, in every aspect, so I need to make the time to practice more with it. It’s not always easy with a baby, but I will make it work.

5.) Eat healthier. I’m not starting a “diet” or cutting out everything that’s bad for me by any means, but I definitely need to eat better, especially with this work out routine I want to start up. I can easily fix healthy dishes in my crock pot or in other ways, and I would love do just that. Maybe even start portioning out meals so I’m not eating so much at a time.

6.) Drink more water. I say this all the time, that I’m going to drink more water, but I need to actually do it. I pretty much live off of Dr. Pepper, and not that I’m complaining, but that’s definitely not going to help me lose any of this weight I want to lose, and it’s not helping with the fact that I feel bladder infections coming on. Oy. I also want to start making healthy but GOOD smoothies. Most of the healthy smoothie recipes I’ve come across don’t end up tasting good, not to me anyway, I mean… I need that sugar! But I want to start making some that I can enjoy — and even add some protein too, to help cut back on food intake. If anyone has any delicious and fruity smoothie recipes, leave them in the comments please. 🙂

7.) Become a better blogger. I don’t have a set schedule or anything, and I know my writing style isn’t the greatest, so I want to work on those things. I want to start writing better, AND have a set schedule for you guys. Aside from the daily challenges I do, I want to do maybe 3 times a week? What do you think? Any advice on how to write better?

8.) Start my youtube channel. I need to stop being so afraid of it. Talking to a camera may be awkward, but who cares right?! Everyone else does it with no problem, and why not do it and talk about stuff I actually really enjoy?? I might also be afraid of what people think, I’m pretty self conscious, but I need to get over that. I shouldn’t care what other people think of me.

9.) Which brings me to this one, BE MORE CONFIDENT. In everything that I do, just be confident, stop being so damn self conscious!

10.) Make more time for my crafts again. I miss crafting things so much.

Blog Challenge: Day 25

Day 25.  My favorite recipe.
I would have to say either the buffalo chicken pasta that I posted on here awhile ago, OR the pasta con broccoli I tried out about a month and a half ago. I meant to upload that to here with pictures but I will do that tomorrow. It turned out SUPER good, was super easy, and I plan to make it a whole lot more!!! I found it on Pinterest… Duh. 🙂

Crock Pot Chicken Philly Cheese Steaks

Good morning, all! I am sooo tired this morning. My little man didn’t fall asleep until around 1 am-ish, he then woke me up close to 4 am, and he just got me up at 7.
Luckily, my mother in law took him for me so I can nap for a little bit. Lets be real, I feel dead after all of that! BUT before I nap, I once again started a dish in my crock pot. As you may have already guessed by my title…. Haha.
CHICKEN PHILLY CHEESE STEAKS, I mean, besides regular Philly cheese steaks does anything sound better than that?!? I will post the recipe below, and show you a picture of my first step, and continue on like I did with my Creamy cream cheese chicken recipe!

Ingredients:
2 lbs. boneless skinless chicken breasts (I’m using tenderloins)
1 cup chicken broth
1/4 tsp salt
1/4 tsp pepper
1/4 tsp garlic powder
1/4 tsp paprika
1 large, or two small bell peppers, sliced
1 medium onion, sliced
2 cups mushrooms
Salt and pepper to season the bell peppers, onions, and mushrooms
French bread or hoagie rolls
Swiss cheese (I forgot to buy slices, so I’ll be using shredded cheese)

Place the chicken into the crock pot. Season the chicken with salt, pepper, garlic powder, and paprika. Add the cup of chicken broth. (Do not add the vegetables yet!)
Cover and cook on low for 6.5 hours.
After the chicken has cooked, add the sliced vegetables on top.
Cover and cook on high for 1.5 hours.
With two forks shred the chicken.
Using tongs, place the meat onto hoagies, first try to tap off the access liquid, and top with cheese. Place the sandwiches open faced in the oven under the broiler for a few minutes to melt the cheese.

Let’s hope this one turns out as good as the creamy cream cheese chicken!! 🙂

Creamy Crock Pot Chicken Finished Product!

This turned out FABULOUSLY! It was so darn good, I know I will be making this again. Now, something I didn’t add to the instructions was that it did call for shredding the chicken. I just did that when it was basically ready to eat though. And it was much easier to do than I thought it would be. I am very happy with the way this tasted! Pinterest win! 😀

Creamy Crock Pot Chicken Update!

No, its not finished yet, but it’s been cooking for about 6 1/2 hours I’d say, and it is making the house smell SO GOOD! I just thought I’d update you all with how its looking now that its been cooking awhile.

It definitely isn’t the best looking, but it smells so good like I said, and I mean, you can’t go wrong with all these ingredients! I can’t wait to try it in another hour and a half or so!!!

Buffalo Chicken Pasta Recipe

One of my favorite dishes to make is Buffalo Chicken Pasta! It is SO DARN GOOD. I would consider it a staple in my house, as I feel I make it quite a lot. (I love anything buffalo chicken – and when I was pregnant that is all I wanted to eat!) Any way, it is such an easy dinner to throw together you will wonder how you ever did without it. 🙂

 

Buffalo Chicken Pasta:

1 Box Penne Noodles

1/2 – 1 Cup Franks Buffalo Sauce

1/2 – 1 Cup Ranch Dressing

2 10 oz. Cans of Chicken (you can absolutely cook chicken breasts and shred them, but I find it more convenient to use canned)

1 Bag Shredded Cheese (whatever kind you prefer, I like Monteray Jack or Mild Cheddar)

 

Preheat the oven to 350 degrees. Make the whole box of noodles. Mix together the ranch dressing and the buffalo sauce in a bowl. Once the noodles are done spread them out in a baking dish. Pour the sauce mixture over the noodles with some cheese and the chicken, mix it all up together and add more cheese on top of the pasta. Bake for 20-25 minutes.

Chicken & Broccoli Alfredo Stuffed Shells Recipe

Okay, so last night I decided to make a favorite meal of mine; Chicken & Broccoli Alfredo Stuffed Shells. Now I cheated a little with some of the ingredients – but it made it much more convenient for me with a newborn.

Ingredients:

2 to 3 cooked chicken breasts ( I use canned chicken – as I said, it was much easier for me to use at this time )

broccoli florets ( I cheated here too and used the easy steamer bag of broccoli florets )

shredded cheese – any kind you would like, I used mild cheddar

1 to 2 jars alfredo sauce

1 box of large shell noodles

Directions:

Preheat the oven to 350 degrees. Cook the chicken and the noodles. Shred the chicken into smaller pieces and mix it with the broccoli, shredded cheese, and some of the alfredo sauce in a bowl. Pour sauce on the bottom of the dish you will use for baking. Start filling the shells until full, and line them in baking dish. Top with more shredded cheese and sauce. Bake for 30 minutes. Voila!
